Thai Cucumber Salad

Tang kwa pad khai is a simple Thai cucumber salad. It's a Thai side dish. It doesn't contain sugar and is, therefore keto-friendly without any need to change the recipe.

  • 3 small cucumbers (or 1 western cucumber)
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 2 eggs

Ingredients

  • 3 small cucumbers (or 1 western cucumber)
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 2 eggs

Preparation

  1. Wash the cucumber.
  2. Julienne the cucumber. Remove the seeds.
  3. Beat the eggs in a small bowl.

Instructions

  1. Heat oil in a wok pan. Add the cucumbers and stir fry until they turn slightly transparent and softer.
  2. Add egg and stir until the egg completely baked.
  3. Remove from the heat, add the sauces and give it a stir.
