Keto Thai Stuffed Omelet

Khai yad sai or stuffed egg is a classic Thai side dish. You'll have a bit of preparation to do, but it has a lot of added value to your meal. It tastes amazing and it makes your lunch or dinner look more sophisticated.

Ingredients

  • 2 tomatoes
  • 100g minced pork
  • 1/4th onion
  • 1 clove of garlic
  • 1 Thai cucumbers (1/4th if you use a European cucumber)
  • 1 tbsp sugar-free tomato sauce
  • 1 tbsp fish sauce
  • 1 tbsp oyster sauce
  • pinch of pepper
  • 1 eggs

Ingredients

  • 2 tomatoes
  • 100g minced pork
  • 1/4th onion
  • 1 clove of garlic
  • 1 Thai cucumbers (1/4th if you use a European cucumber)
  • 1 tbsp sugar-free tomato sauce
  • 1 tbsp fish sauce
  • 1 tbsp oyster sauce
  • pinch of pepper
  • 1 eggs

Preparation

  1. Peel and chop the garlic.
  2. Cut the tomatoes into small cubes.
  3. Dice the onion into very small pieces.
  4. Remove the seeds of the cucumbers and cut into small cubes.
  5. Beat the egg in a bowl.

Instructions

  1. Heat a bit of oil in a wok pan. Stir fry the garlic for a few seconds.
  2. Stir fry the minced pork until done.
  3. Add the onions and keep stirring until they get glassy.
  4. Add the tomatoes and give it a stir. Put a lid on and lower the heat.
  5. When the tomatoes have softened add a bit of pepper, 1 tbsp of fish sauce, 1 tsp of oyster sauce and 1 tbsp of tomato sauce.
  6. When everything tastes to your preference, add the cucumbers, give it a stir and turn off the heat. This is your filling for the omelet.
  7. Heat a bit of oil in a pan and bake the eggs on both sides.
  8. Put the baked egg on a plate and put a streak of the sauce on the egg.
  9. Fold the sides of the egg over the sauce.
  10. Put a plate over the folded egg and flip it over.
