Keto Thai Spicy Fried Egg Salad

Keto spicy fried egg salad is such a treat! I like a little kick, but I don't like my mouth on fire so I only use 1 bird's eye chili per serving. For me that's the perfect balance between refreshing and spice.

Ingredients

For the salad

  • quail eggs (or chicken eggs)
  • cherry tomatoes
  • 1 red onion
  • 1 small cucumbers
  • a little bit of red cabbage
  • a few lettuce leaves
  • a bit of cilantro

This recipe doesn’t contain all the quantities as it is up to you how much you like to have.

For the dressing

  • fish sauce (I use 1,5 tbsp per serving)
  • lime (I use 1,5 tbsp per serving)
  • Thai bird's eye chillies (I use 1 per serving)
  • a pinch of stevia

This recipe doesn’t contain strict guidance for quantity as it is up to you how spicy you want it to be, but you need equal parts of fish sauce and lime to keep the right balance.

This keto Thai spicy fried egg salad fits a keto pescetarian lifestyle perfectly. It doesn't contain meat, but it does contain fish sauce.

If you have a strict vegetarian keto lifestyle you could replace the fish sauce with Thai thin soy sauce or salt. It will be similar, but not the same.

I also posted a version that contains meat.

For the salad

Preparation

  1. Wash the herbs and vegetables.
  2. Cut the vegetables into pieces of your preference.
  3. Chop the coriander.
  4. In a small bowl combine equal parts of lime juice and fish sauce and add the chopped chillies.
  5. Fry the eggs.

Instructions

  1. Mix all the vegetables and pork in one bowl.
  2. Add the dressing spoon by spoon and have a taste before adding another spoon.
  3. Place the fried quail eggs on top. If you used chicken eggs, slice them before placing them on top.
  4. Add the coriander before serving.
