Keto Larb Moo

Larb moo is a North-Eastern Thai dish. Larb moo has its origin in the Isaan region. The Isaan region is known for its spiciness, spectacular flavors, and daring proteins. I’m keeping it safe and simple with this ground pork and mint salad.

Thai spicy minced pork salad

Ingredients

  • 500 gr minced pork
  • 1 slice of keto bread
  • 4 shallots
  • cilantro leaves
  • green onion/scallion
  • mint leaves
  • 2 limes
  • 2 tbsp fish sauce
  • 1 tsp stevia
  • 1 tbsp ground dried chili flakes

Ingredients

  • 500 gr minced pork
  • 1 slice of keto bread
  • 4 shallots
  • cilantro leaves
  • green onion/scallion
  • mint leaves
  • 2 limes
  • 2 tbsp fish sauce
  • 1 tsp stevia
  • 1 tbsp ground dried chili flakes

Preparation

  1. Slice the shallots in thin rings.
  2. Cut the cilantro leaves.
  3. Shop the spring onions.
  4. Squeeze the limes.
  5. Grind/blend the keto bread and toast it (you need 2 tablespoons of ground toasted bread).

Instructions

  1. Add a little oil to a pot. Put the minced pork in the pot and keep stirring till the meat is fully cooked, but not baked.
  2. Add the fish sauce, stevia and ground chili flakes and give it a quick stir.
  3. Add the other ingredients but not the mint leaves and stir.
  4. Taste it. If you want it to be more salty add more fish sauce. If you like it more sour add more lime juice. If you like it spicier add more chili flakes.
  5. If everything is adapted to your preference, add the mint leaves and stir one last time, carefully so you don’t break the mint leaves.
