Ingredients

  • 2 gelatin leafs
  • 225g cream cheese, softened
  • 2 cups fresh or frozen, sliced strawberries, plus extra for garnish
  • 1/4 cup monkfruit sweetener
  • 1 cup heavy cream
  • 1 teaspoon vanilla

Ingredients

  • 2 gelatin leafs
  • 225g cream cheese, softened
  • 2 cups fresh or frozen, sliced strawberries, plus extra for garnish
  • 1/4 cup monkfruit sweetener
  • 1 cup heavy cream
  • 1 teaspoon vanilla

Preparation

Soften the gelatin for about 5minutes in cold water.

Instructions

  1. In a food processor, mix cream cheese, strawberries and monkfruit sweetener until thoroughly mixed.
  2. Melt the gelatin in a tablespoon of hot water and add it to the bender.
  3. Pour everything into a large mixing bowl.
  4. In a chilled bowl, whip the cream and vanilla until stiff peaks form.
  5. Fold the whipped cream into the strawberry mixture. Fold gently until the cream is fully incorporated into the strawberry mixture, but keep it airy.
  6. Transfer the mixture into the serving bowl of preference. Set in fridge to set for at least 30 minutes.
