Keto Moelleux Mi-cuit

Moelleux mi-cuit or runny heart cake is a type of chocolate cake invented by a French chef. English speaking countries often refer to it as lava cake due to its runny interior. This recipe is a fast keto version, which doesn't fully respect the traditional description. You will forgive me for that once you tried this gooey lava cake.

Dark chocolate lava cake

Ingredients

  • 40g dark sugar-free dark chocolate chips
  • 15g unsalted gress fed butter
  • 1 medium egg
  • 1 tsp vanilla extract
  • 15g monkfruit sweetener
  • 15g almond flour
  • 1g (1/2 tsp) coconut flour
  • a pinch of xantan gum
  • a pinch of salt

Ingredients

  • 40g dark sugar-free dark chocolate chips
  • 15g unsalted gress fed butter
  • 1 medium egg
  • 1 tsp vanilla extract
  • 15g monkfruit sweetener
  • 15g almond flour
  • 1g (1/2 tsp) coconut flour
  • a pinch of xantan gum
  • a pinch of salt

Preparation

  1. Pre-heat the oven at 200°C (400°F)
  2. Butter a ramekin (mine are 9cm diameter), be very generous with the butter

Instructions

  1. Melt 30g of sugar-free dark chocolate in the microwave. (Save 10g of of sugar-free dark chocolate for later.)
  2. Stir the butter in the warm chocolate.
  3. Blend the almond flour, coconut flour, monkfruit sweetener, xanthan gum and salt to fine powder.
  4. Beat an egg in a bowl, add the powdered mix and the chocolate and whisk together.
  5. Use a batter spatula to pour half of the mixture in the ramekin. Add the 10g of chocolate chips to the center and add the rest of the mixture.
  6. Place it in the oven for 6 minutes. Keep a close eye on it, because you want to underbake it a little. It will keep baking once it is out of the oven.
  7. After it's still a little jiggly remove it from the oven and let it rest for about 5 minutes. 
  8. With a sharp knife cut around the edges making sure nothing sticks to the sides of the ramesik. Place a plate on top of it and flip everything, serving the cake upside down.
