Keto Chocolate Salted Caramel Cubes

Chocolate Salted Caramel Cubes are pretty easy to make and super delicious. If you love the smell of caramel as much as I do, these are a joy to make.

Ingredients

For the salted caramel

  • 55g grass-fed unsalted butter
  • ¼ cup monkfruit sweetener
  • 110 ml heavy whipping cream
  • 1/8 teaspoon kosher salt

For the chocolate

  • ½ cup coconut oil
  • ½ cup sugar free cacao powder
  • 3 tsp monkfruit sweetener
  • 1 tsp vanilla extract

For the salted caramel

  • 3 tsp monkfruit sweetener
  • 1 tsp vanilla extract

For the salted caramel

  1. Brown the butter in a sauce pot. 
  2. Stir in the heavy cream and ground monkfruit sweetener. 
  3. Set the heat low and let is simmer for 30min. Stir occasionally. 
  4. After 30min the caramel should be thickened. If you are not happy with the thickness, leave it on the low heat and check every 5min. Keep in mind that the caramel will thicken more once it's cooled. 
  5. Remove from the heat and let it cool for a few minutes. Fresh caramel is super hot.
  6. Poor it in a mold and set aside in the fridge.

For the chocolate

  1. Whisk all ingredients together in a bowl (If you live somewhere more cold you should gently heat the coconut oil).
  2. Poor the chocolate over the caramel and place it in the fridge for about 3 hours.
  3. Remove the chocolate salted caramel from the pan and cut it into cubes.
