Ingredients

  • 16 prawns
  • 2 small squids
  • a handful of clams
  • shirataki with oat fiber noodles for 2 persons
  • 2 tbsp fish sauce
  • 2 tbsp keto oyster sauce
  • 4 bunches young green peppercorns
  • 2 small Thai chillies
  • 2 large red chilli peppers
  • 1 large green chilli peppers
  • 2 cloves of garlic
  • A hand full of holy basil leaves

"Kee mao" actually means "shit wasted" but translators kept it more appropriate and it became known as drunken noodles or drunkard's noodles in English. In contrast to western drunken dishes, there's no alcohol in the recipe. Spicy food is believed to help you sober up, that's why it's called drunkard's noodles. It's an absolute beauty, and it's delicious even when you're sober.

Ingredients

  • 16 prawns
  • 2 small squids
  • a handful of clams
  • shirataki with oat fiber noodles for 2 persons
  • 2 tbsp fish sauce
  • 2 tbsp keto oyster sauce
  • 4 bunches young green peppercorns
  • 2 small Thai chillies
  • 2 large red chilli peppers
  • 1 large green chilli peppers
  • 2 cloves of garlic
  • A hand full of holy basil leaves

Preparation

  1. Clean the prawns, clams and squid.
  2. Cut the squid in equal rings.
  3. Soak the clams in fresh water with a bit of salt for at least 20 minutes. Discard all the clams that are damaged or open.
  4. Chop the Thai chillies fine.
  5. Peel the garlic and crush it.
  6. Wash the holy basil and pick the leaves.
  7. Cut the big red chillies into rings.
  8. Soak the green peppercorns in fresh water.
  9. Precook the noodles as written on the package.

Instructions

  1. Heat oil in a wok and stir-fry the clams until they all pop open. Remove the clams and set aside. Discard those that didn't open.
  2. Stir-fry the prawns and set aside.
  3. Add the Thai chillies, garlic, sauces, squid and large chillies and stir fry briefly.
  4. Add the shirataki noodles, green peppercorns. Mix until everything is incorporated.
  5. Stir in the clams, and prawns again. 
  6. Remove from the heat before you stir in the holy basil leaves.
