Keto Pizza Primavera

Pizza Primavera is one of my favorite pizzas. I like to think I have enough self-control, but I’m not sure if I’d be able to not cheat if I was’t able to eat pizza on Keto. I made this one with fathead dough.

Ingredients

Ingredients for dough

  • 150g mozarella
  • 2 tbsp chream cheese
  • ¾ cup almond flour
  • 1 egg
  • oregano
  • a little bit of Vital Wheat Gluten Flour (optional)

Ingredients for topping

  • sugarfree tomato sauce
  • Prosciutto di Parma (Parma ham)
  • rocket salade
  • parmesan cheese
  • olive oil
  • salt
  • pepper

  • 150g mozarella

  • rocket salade
  • parmesan cheese
  • olive oil

Preparation

Instructions

  1. Pre heat the oven on 210°C (410°F)
  2. Melt the mozzarella in the microwave and set aside to cool. Make sure it is cold enough to touch, but still warm enough to knead before you go to step 3.
  3. Add the cream cheese, almond flour and egg. Knead or food processor.
  4. Roll the dough on a piece of parchment paper. I like to pat it with Vital Wheat Gluten Flour to trick my brain I’m eating real pizza dough. Top the dough with a bit of oregano.
  5. Place in the oven for 5 minutes.
  6. Flip the dough and place it in the oven for another 3 minutes.
  7. Add tomato sauce and Parma ham. Place it in the oven for another 5 minutes.
  8. Remove the pizza from the oven. Add the rocket salad, parmesan cheese, olive oil and salt and pepper.

* In step 7 I usually use egg wash on the rim of the pizza and add a bit of rock salt for extra texture.
