Keto Marzipan

Marzipan is easy to make at home. With its main ingredient being almond flour, it's easy to fit the keto lifestyle. Simply changing the sugar to a keto substitute and you can enjoy this sweet treat guilt-free.

Ingredients

  • ½ cup almond flour
  • 3 tbsp powdered monkfruit sweetener
  • 1 egg white
  • a few drops of lemon extract (or originally rose water)

In Belgium, marzipan is given as Saint Nicholas' present to kids. Marzipan is easy to shape and with some food coloring you can make some fun things for kids. Although it's booming around 6 December, you can find it in the store all year round. For the adults there are hundreds of forms, flavors and shapes of marzipan pralines and you can find it in many pastries in Belgian bakeries. Here in Thailand however, I haven't seen it anywhere. Which brings me here, making my own keto-friendly marzipan. Traditionally you'd add rose water drops to marzipan, but I don't really care for it too much. I prefer a few drops of lemon extract.

Ingredients

  • ½ cup almond flour
  • 3 tbsp powdered monkfruit sweetener
  • 1 egg white
  • a few drops of lemon extract (or originally rose water)

Preparation

Instructions

  1. Put the almond flour and the powdered monkfruit sweetener in a food processor. Skip this step if your almond flour is fine. 
  2. Add all the ingredients in a bowl and knead them all together.
  3. Roll into the marzipan into a log and pack it airtight with cling wrap.
  4. Refrigerate overnight.
