Keto Fried Rice

If you have Asian roots or you've been living in Asia a keto cauliflower rice just won't do the trick! Sometimes cauliflower rice overpowers the side dishes, so I've experimented a bit. This Konjac noodle-based fried rice is by far the best homemade rice replacement I've come up with.

Ingredients

For 2 to 3 persons.

  • 650g Konjac noodles (more or less)
  • 100g minced pork
  • 1 egg
  • 1 tsp fried garlic
  • 1 tsp fish sauce
  • 1/8 tsp ground peper
  • 1 green onions/scallion

Ingredients

For 2 to 3 persons.

  • 650g Konjac noodles (more or less)
  • 100g minced pork
  • 1 egg
  • 1 tsp fried garlic
  • 1 tsp fish sauce
  • 1/8 tsp ground peper
  • 1 green onions/scallion

Preparation

  1. Wash and cook the konjac noodles as requiered on the package. Drain and set aside to cool. 
  2. Wash and cut the green onions into thin slices.
  3. In a food processor pulse the konjac noodles to fine pieces.

Instructions

  1. Heat a bit of oil in a wok pan and add the minced pork. On a low heat stirfry untill done.
  2. Stir in the pieces of konjac rice. Crack an egg over the konjac rice and stir.
  3. Add all the other ingredients and stirfry untill the egg is fully incorporated.
