Keto Thai Papaya Salad

Som tam Thai or Thai spicy papaya salad is a very popular dish in Thai cuisine. With ingredients like papaya, palm sugar, and peanuts it isn't the most keto-friendly dish. Don't worry, you don't need to miss out on your favorite Thai spicy papaya Salad. I created a keto som tam Thai recipe.

Ingredients

  • 1 cup of jícama (Mạn kæw - มัน แกว in Thai)
  • 4 sida tomatoes (pink grape tomatoes) (Mak̄heụ̄xtheṣ̄ s̄ī dā - มะเขือเทศสีดา in Thai)
  • 1 long bean
  • 1 tbsp dried shrimp
  • 1 red chilli
  • 1 clove of garlic
  • 1 lime
  • 1 tbsp fish sauce
  • 1 tsp monk fruit sweetener

Green papaya or unripe papaya supposably contains less carbs than ripe papaya, but there doesn't seem to be much information to confirm that. To be safe I replaced the papaya for jícama (Mạn kæw - มัน แกว in Thai). One cup of jícama has 5.1 grams net carbs. In my opinion it resembles unripe papaya better than cucumber, cabbage, or any other replacement I've seen people use for their keto Thai papaya salad. As I opted for jícama I replaced the roasted peanuts for roasted macadamias, which are more keto-friendly. I feel like this is the best keto som tam Thai recipe (or the best keto Thai papaya salad recipe) there is. 

Ingredients

  • 1 cup of jícama (Mạn kæw - มัน แกว in Thai)
  • 4 sida tomatoes (pink grape tomatoes) (Mak̄heụ̄xtheṣ̄ s̄ī dā - มะเขือเทศสีดา in Thai)
  • 1 long bean
  • 1 tbsp dried shrimp
  • 1 red chilli
  • 1 clove of garlic
  • 1 lime
  • 1 tbsp fish sauce
  • 1 tsp monk fruit sweetener

Preparation

  1. Remove the peal of the jícama and grate it.
  2. Wash and slice the tomatoes.
  3. Wash and cut the long beans in very fine pieces. 
  4. Squeeze the lime.

Instructions

  1. Put all the vegetables in a bowl. 
  2. Use a pestle and mortar or if you don't like big messes like me, use a small food processor and pulse the clove of garlic, chilli, lime juice, fish sauce and monk fruit sweetener a few times.
  3. Pour the sauce over the bowl of vegetables and mix it well.
